Back in 2019 I fell in love with this cheddar. It is made in Murray Bridge, South Australia in beautiful retro cheddaring facility using traditional cheese making techniques. This love affair led Pepe to work with the cheesemakers to create this cheddar for us and Pepe Saya became ‘the keepers of the cheese’.

This is a clothbound cheddar aged for a minimum of 2 years, then wedged from the wheel. The cheddar has a tangy, sharp, earthy flavour. Perfect with our chutney and a chunk of fresh bread.
