As a child, Mrs Pepe loved to bake and was fortunate enough to have a neighbour who also shared this passion, her name was Stevie. One of Mrs Pepe’s favourite recipes Stevie would bake is her ‘Savoury Cheese biscuits’. Flour, a good tasty cheese and a kick of cayenne pepper formed into a dough, rolled out and cut with her sherry glass, baked until slightly crisp.
Ingredients:
- 60g Salted Pepe Saya Cultured Butter, cut into small cubes
- 80g all-purpose flour
- 120g tasty or vintage cheddar cheese, grated
- 1 x egg yolk
- The juice of one lemon
- A pinch of cayenne pepper
Method:
- Add flour and butter to mixing bowl, using your fingertips rub the butter and flour together until it resembles bread crumbs
- Next add grated cheese, egg yolk, lemon juice and cayenne pepper, combining together with your hand or flat bladed knife until the mix comes together forming a dough
- Pre-heat your oven to 180°c (fan forced)
- Using a fluted small biscuit cutter or small glass dusted with flour begin to cut out the biscuits and place onto a baking tray lined with baking paper
- Then re-roll the remaining dough and continue to cut out your biscuits until all the dough is used up
- Place your tray in the pre-heated oven (180°c) and bake for approximately
8 – 9 minutes - Once baked they will feel a slightly soft, remove from oven and using a flat bladed knife gently place the biscuits onto a cooling rack. The biscuits will begin to slightly firm up whilst cooling
- Store in an airtight container or jar
