Pecora Bloomy Ripened Cheese
Bloomy is a mould ripened cheese with a beautiful ivory, wrinkled delicate skin. Beneath the rind, is a gooey texture with a translucent halo, which becomes molten as the cheese matures. The center is dense, rich and smooth with a slightly chalky texture. When young, Bloomy has notes of citrus with a lingering “crème fraiche” mouth-feel. As it ages, Bloomy becomes more buttery, earthy and intense.
Pecora Dairy is an artisan sheep milk dairy and cheesery farm in Robertson, the Green Heart of the Southern Highlands, within 100 miles of Sydney. Their ewes graze lush pasture and drink from crystal clear running creeks to produce rich, creamy milk to make their seasonal ewes milk cheeses.
